Here’s a young SmartMonkey chef named Sebastian with his mother Carla. They came to see me at my book signing at Euphoria Loves RAWvolution in Santa Monica, CA last week. Carla showed me their copy of my first uncookbook, The Art of Raw. It was all marked up and highlighted with hand written notes all over every page. Sebastian had made every recipe in that book many times over. We shared wakame recipes…boy does he know his stuff! I can’t wait to try some of his creations!!

Many of you have been asking what it was exactly that I made for Pesco from his Boing Boing review. It was this beautiful Red Beet Salad!

Red Beet Salad
The flavor for this simple salad comes from the delicate pine nuts, sweet red beets, and fresh dill.
Begin by placing all ingredients into a mixing bowl:
1 red beet, julienne
1 carrot, julienne
1/2 head of romaine lettuce, torn
1/2 bunch spinach, torn
1/4 cup fresh dill, torn
1 stalk celery, chop
1/2 cup pine nuts
Next, drizzle the ingredients for this simple dressing right into your mixing bowl:
1 Tablespoon apple cider vinegar
3 Tablespoons olive oil
1/2 lime’s juice
1/2 teaspoon sea salt, to taste
black pepper, to taste
Toss, and serve.

Here’s a delicious raw vegan donut hole recipe. Naturally sweetened with whole dates, and flavored with vanilla. Plus, coconut, which is a great source of eletrolytes. I love making these with kids, they have a lot of fun rolling up the balls with their hands.
Donut Holes
1 cup almonds, dry
1/4 teaspoon sea salt
1 vanilla bean, scraped
1 cup dried pineapple, chop
1 cup pitted dates
5 Tablespoons dried shredded coconut

A great way to enjoy whole oranges. Just blend with vanilla, and add pecans for maple-flavored creaminess. Just use the whole vanilla bean in your high speed blender, or de-seed and use only the seeds in a lower-speed blender. You can always use a Tablespoon of vanilla extract instead, but make sure it’s alcohol-free.

2 oranges, peel and seed
1 cup pecans
1/2 cup pitted dates
1 vanilla bean
2 cups filtered water

Let me show you how to get those deliciously fragrant vanilla beans out of their pod. Whenever possible, I opt for the fresh whole vanilla beans over the extracts. A vanilla bean can cost anywhere from $1.50 and up, but the flavor it adds is priceless yumminess.
Remember to keep the remaining ‘bark’ to blend into your smoothies with your high-speed blender. I like to store the bark in my glass jars with my nuts and seeds.
Vanilla beans come from different regions. My favorites are Bourbon beans from Madagascar, Indonesia (rich taste and smell, creamy and sweet) and Tahitian beans from Tahiti (aroma is fruity and floral). Beans from the same plant stock grown in Mexico are called Mexican beans, and have a more mellow woody fragrance.

1/2 carrot, cut lengthwise
