Mushroom Bulgogi Taco Recipe

I like to make my Mushroom Bulgogi with mushrooms, instead of beef. This is one of my favorite recipes, and perfect to wrap in a leaf or inside a thinly sliced daikon radish... like a taco!! ….Like in the photo above (courtesy of Vegetarian Times Magazine). In addition to this recipe tasting delicious, mushrooms are a super food that boost our immune system while helping us fight illness, disease, and even cancer. Check out the recipe in this month's June 2014 issue,  and on their website: http://www.vegetariantimes.com/recipe/mushroom-bulgogi-filled-daikon-wraps/   Enjoy it! xo

A Warm Green Salad Recipe

I've been playing with fire! I'm enjoying lightly sautéing fresh vegetables and then tossing them hot into a big salad bowl full of fresh greens. Today, I cooked up some garlic in coconut oil with halved cherry tomatoes and chopped broccoli. I added it to a big bowl of chopped up romaine, spinach, arugula, and mixed it all up to allow the cooked veggies to wilt the greens. I finished it off with capers and artichoke hearts. No dressing needed, as the capers and artichokes add saltiness and pickled tartness, while the garlic adds pungency. Give it a try, this salad is to live for! And yes, I do still consider this salad a vegan raw food…. Warm Green Salad 3 cloves garlic, chopped, to taste 1 cup cherry tomatoes, halved 1 cup baby broccoli, chopped 1 Tablespoon coconut oil 2 cup romaine, chopped 1 cup spinach 1 cup arugula 3 Tablespoons capers 1/2 cup artichoke hearts Warm up your pan on medium heat, add coconut oil and garlic. Sauté until soft. Add tomatoes and broccoli. Lightly cook, to desired consistency. Place romaine, spinach, and arugula into a large mixing bowl. Top with cooked vegetables and toss to mix well, wilting your greens. Add capers and artichokes, and toss to mix well. Serve and enjoy!

Purple Cauliflower

Look what I picked up at the Farmers' Market…. beautiful purple and green cauliflower. I love the purple for its' color, plus it contains  anthocyanins to help regular blood sugar levels and body weight while lowering our cancer risk. Both green and purple cauliflower contain glucoraphanin which converts into anti-cancer compounds in the body. Both are great fresh, organic, detox, raw food. I typically gravitate to the color green, along with kale and brussel sprouts…..so, remind myself to eat the colors of the rainbow along with many different vegetables and varieties to ensure I get the full spectrum of vitamins, minerals, and nutrients my body needs. An easy way to mix it up is the pick various colors at the farmers' market. What goodies did  you find at your local farmers' market this weekend?

Abundance and Gratitude

I love that I have this opportunity to wake up on the coast at Rancho Palos Verdes here in Southern California. Today I am stretching and breathing on the edge, enjoying abundance, and remembering that we don't need to worry about running out of air to breathe or that the sun will run out of sunshine to shine upon us. I'm feeling deep gratitude and joy. What brings you joy today?

Superfood Energy Truffles

Energy Truffles are a great way to power a long hike, bike ride, and even a car ride. These truffles travel easily, and are packed full of delicious organic goodness. I took this batch on a 4-hour hike in the Santa Monica Mountains this past weekend with my personal trainer. Each time our energy would get low, we'd pop one of these truffles to boost our endurance and stamina. They are made with omega-3 rich walnuts, antioxidant filled cranberry and raisins, and superfood cacao and maca. Flavored with a hint of vanilla, and rolled in coconut. Delicious!

Vegan Protein Pudding

I whipped up this Protein Pudding at my client's home by using what he had on hand in his fridge and cabinets. Since he had no vanilla extract and no cacao powder, I used his flavored vegan protein powders instead. He did have half of a banana, 2 avocados, coconut water, and stevia powder. So, I made this Protein Pudding by blending together sweet banana, creamy avocado, chocolate and also vanilla protein powders, electrolyte coconut water, and non-caloric stevia powder. And it was delicious! Though I've personally stopped using all protein powders (instead I'm using only whole foods), this gluten-free, vegan pudding is an easy way to up your protein intake today. Happy Meatless Monday!
